Fresh herbs can transform a dish and really distract you from the absence of carbs! This delicious dressing is carb-free, dairy-free and vegan friendly and great for drizzling over roasted veggies, steamed greens or meat to add a little extra flavour.
Ingredients
- A large handful of basil
- A medium handful of mint
- Juice of 1/4 lemon
- 3 tablespoons olive oil
- 1 small clove of garlic
- Black pepper to season
Method
- De-stalk, rinse and dry the herb leaves then place them together on a chopping board and finely chop.
- Add to a bowl, along with the olive oil and the juice of half a lemon.
- Crush and finely chop the garlic clove, add to the bowl, combine with the herbs and oil and season with a little pepper.
- Drizzle over anything you fancy!
